Open For Business: The Lazy Burrito

A new Tex-Mex restaurant opens in East Lyme

 

It's hard to miss the flags flying at 323 Flanders Road in East Lyme, but in case you drove by and didn't notice, the Lazy Burrito is open for business. 

The restaurant, which offers "authentic Mexican food made fresh daily," opened about three weeks ago. It's owned by Tyler Gilbertie, who opened his first Lazy Burrito in Mystic last May.

Restaurant manager and East Lyme native Nick Farrauto said that business has been brisk since the take out or eat in rival to East Coast Taco opened but, given that Niantic is a seasonal town, he expects it to pick up when the summer comes.

Lazy Burrito is open from 11 a.m. until 8 p.m. daily and offers burritos, tacos, and salads, with speciality fillings including pulled chicken, pork, beef, and vegetarian fillings. You can get guacamole with everything, and their signature salsas include pico de gallo, salsa verde, salsa Colorado (hot) and roasted corn-red pepper (medium hot). There's also a kids' menu.
